Art. 138 Kümmel, Aquavit
1 Kümmel (Spirituose mit Kümmel) ist eine Spirituose, die durch Aromatisieren von Ethylalkohol landwirtschaftlichen Ursprungs mit Kümmel (Carum carvi L.) gewonnen wird. Es dürfen andere Aromen sowie Aromaextrakte zugesetzt werden. Der Kümmelgeschmack muss jedoch vorherrschend bleiben.
2 Aquavit oder Akvavit ist Kümmel, der mit einem Kräuterdestillat oder Gewürzdestillat aromatisiert wurde. Die Zusammensetzung muss folgende Kriterien erfüllen:
a. Ein wesentlicher Teil des Aromas muss aus der Destillation von Kümmelsamen oder Dillsamen (Anethum graveolens L.) stammen.
b. Es dürfen auch andere Aromen verwendet werden.
c. Der Zusatz ätherischer Öle ist nicht zulässig.
d. Der Geschmack von Bitterstoffen darf nicht dominierend sein.
e. Der Extraktgehalt darf nicht mehr als 1,5 g pro 100 ml betragen.
