Wasser im Sinne des § 9 Abs. 1 des Gesetzes ist alles in der Natur vorkommende, gesundheitlich unbedenkliche Wasser sowie solches Wasser, das nach Maßgabe der jeweils geltenden lebensmittelrechtlichen Vorschriften für Trink- oder Brauzwecke aufbereitet worden ist. Maische oder Würze darf mit auf dem Malz natürlich vorkommenden Milchsäurebakterien, auch wenn sie vermehrt worden sind, angereichert werden.
